How we store wine

The Marques de Berol cellars are a link between modernization and centuries-old traditions.

The storage facilities of our winery allow us to produce and mature quite large volumes of wine. For the complex fermentation process, the wine is placed in concrete and stainless steel tanks.

The use of stainless steel tanks is the latest modern environmentally friendly technology. They are made in accordance with all food standards and are ideal for maceration and storage of wine. for fermentation and storage of wines, it is best to use tanks with legs.

But adhering to the tradition and experience of past years, concrete deposits are also used at the plant.

Due to the microporosity of concrete tanks during storage in them, the wine reaches its micro-oxygenation. As a neutral material, concrete does not leave any residues in wine and is sufficiently insulating, which makes it easier to keep the wine at a stable temperature during processing and aging.

Concrete has a stabilizing effect on the temperature of the wine, avoiding surges that harm the yeast. Inside the concrete container, all processes are gradual, soft, without abrupt changes, and this is not only during fermentation, but also during storage or stabilization.

Another interesting aspect of our wine-making cellars in favor of using concrete is the ability to use the same aridez (lack of water in the soil and moisture in the air), which is part of the land for growing grapes the use of concrete tanks provides the ability to maintain natural atmosphere for storing and aging the resulting wine.

Compared to wood, in which the wine should not be overexposed, concrete and stainless steel do not contain tannins, undesirable aromas that can prematurely "colour" wine, concrete and stainless steel are neutral materials.

For further aging and maturation of the wine until it reaches the desired taste and aroma qualities, the finished wort is placed in wooden barrels made of French and North American oak of different capacities  certain aging.

The error-free production of the desired wine is monitored by our experts using smart electronics.

After all the stages passed, the finished wine is bottled. Warehouses allow you to store spilled wine until it is sent to the buyer.
